There’s been a few openings in Edmonton that have stirred some excitement in me; they’re few and far between but when they come along, it’s as if a unicorn is gracing you with its presence. Alder Room is one of those unicorns in Edmonton. It’s concept is to make having a dinner out into an experiential event with regional and seasonal cuisine. Executive Chef Ben Staley achieves this by offering tickets to purchase in advance for the 12 seats each evening Wednesday through Saturday. With this, they omit the end of meal bill dread so that each guest can fully and leisurely enjoy the entire experience of dining. Each seating is different and the number of courses range from 12 to 20; they encourage you allot 3 hours for the meal.

Our preview of Alder Room began with snacks:

– Quail egg, rolled in vegetable ash
– One year aged salted pork belly
– Sunchoke skin with almost burnt cream

The quail egg was easily my favourite – I loved the textured of the yolk inside mixed with the vegetable ash. Deeeeeelish.

The second course was: Asparagus with salted green strawberry and trout roe.

Dessert was:

– Salty jersey milk ice cream & our maple syrup
– Rye caneles
– Burnt honey caramel
– Pickled blueberry page de fruit
– Strawberries, cooked in sugar for 3 days.
